The Bow Knife is said to have been invented by a shepherd as an improvement to the traditional Italian method of using a string affixed to two pegs to cut polenta, butter and soft cheeses. The bow shape keeps the wire taught for flawless and artful cutting of stracchino, robiola, soft goat cheeses, ricotta and fresh tometta. Handmade in the Tuscan village of Scarperia, dedicated to the artisanal production of cutting tools since 1400. Ideal for: kitchen.
